Whiskey is the drink of choice for many people around the world. In fact, the Gaelic word for Whiskey means “water of life.” Even though it is one of the most popular beverages in the world, there is much confusion surrounding the different types of Whiskey and what makes them different. We asked our Expert Mixologist, Matt, to answer some of the most-asked questions at a G Texas Catering Whiskey Tasting at events in Dallas

How is Whiskey Made

Bar Catering in Dallas: How is Whiskey Made?

Whiskey gets its start as ‘mash’ when water is added to malt. This process encourages the malt to germinate quickly, creating sugars. The type of water used in this step is paramount to the success of the whiskey – many distilleries are near natural springs for this reason. The mash’s sugars are mixed with a little yeast to create alcohol and fermentation begins. This immature alcohol goes into a still and is distilled up to three times to increase the alcohol content.

In preparation, oak casks (barrels) are charred on the inside. The whiskey is put in the casks where the charring turns the whiskey from clear to a golden brown over time. For two to three years, the whiskey remains in the cask, maturing. Unlike wine, whiskey matures in the casks, not the bottles. When it is finally time to bottle the finished whiskey, sometimes certain casks are mixed together as they are filtered to create a blended whiskey.

It is no surprise that Scotland, known for its moors, intemperate weather and rocky countryside produces a rugged and earthy liquor. Scotch also goes by the name Scotch Whisky and is made from malted barley. To be considered Scotch, it must be entirely made in Scotland and must be aged for 3 years in oak casks to create the optimum flavor. Scotch has a complex taste, redolent of wood and smoke. It is generally regarded as the smokiest of all the whiskeys.

Spice is the dominant flavor in Rye Whiskey, though the essence of different fruits will also make an appearance. Rye Whiskey has a spicy taste that has been described as a “hard-edged version of bourbon.” Most will agree that rye produces a bit of a bite, in a good way. Taste this full-bodied whiskey for yourself. There are two different types of Rye Whiskey: American Rye Whiskey and Canadian Whisky.

To earn the name of American Rye Whiskey, the beverage must be distilled from at least 51% rye grain. Often, various amounts of barley and corn are added to the rye. When aged for two full years, American Rye Whiskey can be labeled ‘Straight.’

Canadian Whisky is the second type of Rye Whiskey. There are no strict rules defining what goes into Canadian Whisky, so it may be made from any grain, as long as it has a bit of rye and smells, tastes and has the traditional characteristics of Canadian Whisky. Only one producer in the world, Canada’s renown Alberta Premium, uses 100% rye mash in their Canadian Whisky. The loose definition of Canadian Whisky results in many different tastes within this category. A trained Mixologist can help you uncover which whiskeys suit you best.

Irish Whiskey

The Irish are known for their easy-going, unhurried attitudes. Unsurprisingly, the rules for Irish Whiskey are just as relaxed, stating that any type of cereal grains are acceptable ingredients and if more than one grain is used, it must be labeled as ‘blended.’ The only other requirement is that it must be aged for three years using wooden casks. All whiskey produced in Ireland is considered Irish Whiskey. These loose rules encourage many different flavors and nuances in wonderful Irish Whiskeys. Irish Whiskey, though less sweet than Bourbon, is quite smooth. It can also be complex, with deep flavors.

Whiskey or Whisky?

Perhaps it’s a small thing, but the letter ‘e’ is absent in both Scotch Whisky and Canadian Whisky. Both countries, Scotland and Canada, have been making whiskey for many decades, perhaps even centuries and the old spelling is long entrenched.

Event planners in Dallas are always looking for new ways to create a “WOW” factor for their clients. One way to do this is to incorporate entertainment into your guest’s culinary experience. Interactive bar stations have become one of the most popular trends for bar catering in Dallas. One of our favorite ways to incorporate excitement into bar service at an event is a Whiskey Tasting.  

The great thing about a Whiskey Tasting is that it entertains as well as educates. Generally, five or six whiskeys are chosen for the tasting. You can choose these based on personal preference or because they are alike (whiskeys from Texas) or because they are entirely different (bourbon, rye, scotch). During a Whiskey Tasting, an expert mixologist will share a variety of details about each whiskey and teach you a bit about the way whiskey is created and the differences between them. Unlike wine tastings, little emphasis is placed on the look and color. The majority of the tasting focuses on isolating the strong and subtle flavor differences.

Whiskeys are varied in taste due to the ingredients used to create it. For example, flavors can change based on the flavor of the water used in malting, or the different types of grain or grain combinations. The barrels are also a factor. These interesting combinations are what makes each whiskey special. According to experts, five different qualities may appear in whiskey:

·         Sweet Aromatics, such as chocolate or caramel

·         Spice, such as ginger or nutmeg

·         Fruit and floral, such as plum or lavender

·         Wood, such as oak or cigar box

·         Grain, such as corn or barley

Bar Catering in Dallas: How Do You Taste Whiskey?

During a Whiskey Tasting, an expert mixologist will teach you how to taste the whiskey in a way that will allow you to fully appreciate all its flavors. Part of this process is learning to detect the aromas within each whiskey. The whiskey in the glass divides into three parts: the bottom holds the heartier scent, the middle holds the stronger, acidic elements and the top of the glass contains the lighter scents. Each person’s sense of smell can detect millions of scents. The smell begins in the nose and travels into the nasal cavity and passageway. When tasting whiskey, vary the way you draw air into your nose, sometimes deeply and sometimes lightly to best sample all the subtleties of the liquor. Also, during the tasting, occasionally drink small amounts of mineral water to cleanse the palate.

In order to enhance the experience, do not place nose directly over the glass. Instead, hold the glass where the top of the glass is above your nose. Try not to move the glass, no swirling, but allow the scent to remain concentrated and wait for it to come to your nose. This is where you will contact the lighter, softer elements such as fruit or floral hints from the top of the glass.

Turn the glass onto its side, perpendicular to your face. Hold as steady as possible. Now you can smell the heavier scents such as woody, earthy elements at the bottom of the glass. Next move the glass upward slightly to smell the middle of the glass. These usually smell spicy, winey or malty.

Now that you have isolated the different parts of the whiskey, it is time to taste. Taste the whiskey in tiny sips and hold it in your mouth for 30 seconds to let the full flavor come out. Move it to the front and back of your tongue to reveal all the flavors. After swallowing the sip, exhale deeply to taste the ‘finish’ of the whiskey.

One additional step you may want to try is to add a drop or two of room temperature mineral water to open up the taste of the whiskey. Be careful – too much water may dilute the flavor.

The event on October 20th at Gilley’s Dallas is expected to draw 3,500 guests and raise millions of dollars for cancer research. The Farm to Table Nosh features Hill Country Smoked Sausages and Cured Meats, Garden Vegetable Crudite with Ranch Dip, Smoked Cheddar and Pretzel Chips.

Dine as if you were on an old-time authentic cattle drive at the Texas Chili Wagon where you will find delicious Shiner Bock Chili Pie with Fritos and all the fixings.

Where there is smoke, there is Delicious BBQ at the Hill Country Barbeque Pit.  At this station, guests will enjoy Mason County Pit Smoked Brisket as well as Pit Rubbed, Smoked Beef Brisket lightly trimmed with marbled edges and served with a Vinegar Mop Sauce, Charbroiled Chili Rubbed Chicken Breast with Honey Beer Mustard Sauce and Hill Country Smoked Pork Sausage. Don’t forget you’re veggies – round out your meal with Kicked Up Barbeque Beans with Molasses and Red Onion, Red Skinned Potato Salad and Soft Yeast Rolls.

The Late-Night Breakfast menu includes Crispy Chicken Flautas with Creamy Avocado Dipping Sauce and Spanish Rice and Spicy Sausage and Egg Tacos with House-made Salsa. Who is the American Cancer Society?

Founded over 100 years ago, the American Cancer Society is known for its nationwide, free programs and services for people with cancer and their families. Their mission is to help those with cancer understand their disease, manage all the ups and downs of treatment and recovery, and be emotionally supportive during the entire journey. The ACS has several programs in place to fulfill this mission:

  • The National Cancer Information Center provides 24/7/365 hotline and live chat to provide accurate, timely information about services and resources in the patients’ communities.
  • Patient Lodging Programs provides hotel stays when patients are away from home for treatment.
  • Road to Recovery provides rides to cancer patients who need assistance getting to and from treatment.
  • Reach to Recovery is designed for breast cancer patients to be matched with a mentor who has “been there” to talk about ways to cope with breast cancer.
  • TLC catalog and website provides breast cancer support with products such as wigs, hairpieces breast forms, and mastectomy swimwear.
  • Look Good Feel Better allows volunteer cosmetologists to teach women (also men and teenagers) to deal with appearance-related side effects of cancer, including skin and hair issues.

How does the American Cancer Society raise money?

The ACS has many fundraisers all over the country all year long. Making Strides Against Breast Cancer walks are three to five miles of friendly walking with entertainment afterward. Another popular fundraiser is Relay for Life. Relay for Life events have a few things in common: team participation, emphasis on survivors & caregivers as well as decorated paper bag luminarias, glowing with candles, each representing a life. The Coaches vs Cancer fundraiser and educational programs is driven by the National Association of Basketball Coaches. Volunteers for the ACS also plan many galas, balls and parties to fundraise for this worthy cause. The largest single-day fundraiser is the Cattle Baron’s Ball.

The Cattle Barron’s Ball was introduced in 1974 and over the years has raised over $77 million dollars for research which funded, among other things, the development of several drugs to treat breast cancer, a prostate cancer PSA screening test, the ‘inherited gene’ discovery for breast and colon cancer and the Clinical Trials Matching Service which allows patients to choose from over 65,000 options for treatment.

Epicfest: The Flight of the Monarch

The City of Grand Prairie’s first Monarch festival, on September 21 and 22, celebrates nature, community culture and arts. The family-friendly event features three butterfly releases at noon, 2:00 and 4:00 on both Friday and Saturday when the butterflies will take their first flight. Children’s festivities include arts and crafts, many featuring the life cycle and migration of the Monarch butterfly. The featured bands, AB Quintanilla y Los Kumbia Kings Allstarz and Sister Hazel will take the main stage. Other live musical entertainment featured throughout the festival include the Tejas Brothers, Monica Saldivar, Cleghorn, Bird Dogs and Petty Theft. Epicfest is located at 2960 Epic Place (formerly known as Grand Central), the Grand Lawn Amphitheater and surrounding facilities. Western Days in Lewisville

Western Days is a fun event for the whole family. There will be a mechanical bull, pony rides, the Hot Diggity Dog Hoe Down Dog Show and the Wild & Free art exhibit. Headlining on the main stage are the Randy Rogers Band (Friday) and Gary Allen (Saturday). Other performers include Holly Tucker, Southern Brave, Kody West, Tyler Marco, Jonathan Tyler & the Northern Lights, along with many more talented artists. Festival-goers can also see Dolly Parton and Kenny Rogers impersonators! The new Witherspoon Distillery outdoor stage will be broken in by the Hightower Band, Def Leggend, Justin Tipton and Greg Schroeder. Gates will open at 5 p.m. Friday, September 28, and 10 a.m. on Saturday, September 29. Admission is free with a ticket before 7 p.m. both days. G Texas Catering’s Newest Philanthropic Adventure

G Texas Catering is joining forces with the WakWay Foundation to combat food insecurity among children in the Dallas area. Food insecurity is more than just being hungry. It is the lack of consistent access to a sufficient quantity of affordable, nutritious food. Many people in Dallas and its surrounding communities do not know where their next meal is coming from. It is estimated that 1 in every 4 children in Texas (almost 1.9 million) are food insecure. In North Texas alone, 300,000 children can’t count on having enough food at mealtimes.

G Texas Catering has recognized this heartbreaking reality for many of our neighbors in Dallas and has begun fighting the battle against food insecurity by repurposing extra food from the hundreds of events we cater every year. We will box up surplus food for WakWay to take to inner cities and shelters in the Dallas/Fort Worth area. Through this partnership, G Texas Catering will be able to donate over 1,000 pounds of food each year!


What is WakWay?

The WakWay Foundation was created by Don “Wak” Wakamatsu, a former professional major league player, scout, manager and current coach at the Texas Rangers. As a professional athlete, Wak had a strong desire to find a way to help people, especially children, stay healthy. He provides easy to make, healthy meals and snacks to children in the Dallas area.  

The WakWay Foundation also founded The Produce Stand project. This idea came to fruition when Wak noticed a crop of cherries at his family farm wasn’t being picked because it was cost prohibitive. He realized that this abandoned crop and many more like it could be used to feed people who are struggling with food insecurity. He immediately began devising a transportation system to get abandoned crops to shelters and other volunteer organizations in the Dallas area.

However, he found that getting the food from donor to the children and families in need is the biggest detriment to feeding the hungry. According to the WakWay Foundation, the problem with getting food to those who need it most is not the lack of food – it’s the complication of logistics that keep this food away from those who need it. It is estimated that over 72 billion pounds of perfectly good food, worth $218 billion, goes to waste each year. This food waste fills up to 21% of our landfills. Also, 20 billion pounds of fruits and vegetables are discarded on farms or abandoned in fields and plowed under. WakWay Foundation’s streamlined transportation system allows food to go from the donation site to a table within hours, providing large quantities of healthy food to numerous people.

The G Texas Catering culinary team specializes in creating custom menus and fulfilling special requests for clients. What happens when the client requests a dish or variation of a dish that isn’t in our extensive recipe book? Executive Chef Micheal Gooch writes one.

Unlike most restaurants, catered events feature a wide variety of menus and cooking styles. Many events call for regional flavors such as Southwestern, Tex-Mex, Creole or Barbecue while others include global cuisine from Asian flavors to Mediterranean and traditional Italian offerings.

It takes years and years of practice with culinary techniques, flavor profiles and learning the science behind the art to have the ability to create a proper recipe from scratch.

Custom Catering

To build a menu for a client requesting a specific theme, Chef Gooch researches culinary techniques, ingredients and traditions practiced in that culture. Combining research and his extensive culinary training, he not only replicates the dish but makes it his own. However, research and technique aren’t the only things that the Chef needs to consider when creating a recipe. In a restaurant environment, a meal is prepared and served immediately. At a catered event, we are often required to serve the meal several hours after preparation. Therefore, when a custom recipe is developed the chef must also consider:

* The event location

* The number of guests at the event

* Facilities available at the venue

* Demographics of the guests attending the event

* The style of service (seated dinner, buffet, chef-attended stations, tray passed, etc.)

All of these factors and many more will determine the types of food used, how it will be presented, how much food will be sent and how it will be transported to the event site. The Chef may be happy with the flavor profile and presentation of a meal at our corporate kitchen, but he must consider that the product temperature has to be maintained throughout delivery to the event venue and service to our guests.

If the venue has kitchen or preparation facilities the Culinary team will often deliver the components or “mise en place” to the venue and complete the preparation on site to ensure the meal is fresh and flavorful. Seasonings, garnishes and sauces are all carefully planned in the final plate presentation of the entree, Hors d’ Oeuvres or Dessert to be served.

Staff Spotlight: Chef Stu

Stu Selleck fell in love with cooking watching his father in the kitchen as a child. Since then, He knew he wanted to attend culinary school and become a chef.

“Chef Stu has been an incredible asset to our team, creating great menus and managing kitchen operations as a Venue Chef, Event Chef and Sous Chef for more than 4 years,” said John Gilbert, President of G Texas Catering, “He cares so much about our organization and takes complete ownership in every event and restaurant operation that he is a part of.”

He joined the G Texas Catering team in October of 2014 working as a chef in our corporate kitchen. After showing immense culinary and management skills, he was asked to head G Texas’s café operation at The Potter’s House.

Chef Stu Stu Selleck fell in love with cooking watching his father in the kitchen as a child. Since then, He knew he wanted to attend culinary school and become a chef.

Stu continually shows his dedication to G Texas Catering and his work as a chef; which is why John knew he was the right person to assist with the development and opening of G Texas’s new restaurant concept in the Dallas Arts District, The Artisan Craft Kitchen and Terrace Bar.

Stu said the best part about being a member of the G Texas Catering family is just that; it is a family. Even though being a Sous Chef is a physically and mentally taxing career, its worth it to him to see the finished product leave the kitchen for the customer to enjoy!

Stu is loving life at the Artisan, especially when he can cook (and taste) Italian food – his favorite! He credits much of G Texas Catering success to its great leadership. We are proud to have Stu as a leader within our organization and an integral part of our successes.
